Scientists call it a silent public health problem — and it's sitting on your stove

There is a class of chemicals that the CDC has found in the blood of the overwhelming majority of Americans it tests. They are called PFAS. They do not break down — not in the environment, and not in you. And one of the most common places they enter an ordinary household is the pan you cooked dinner in last night.

This is not a fringe concern. In 2024 the EPA set the first-ever national drinking water limits for several PFAS compounds, and set them in the single-digit parts per trillion — the regulatory equivalent of saying as close to zero as we can measure. That is how seriously the agency now treats this family of chemicals.

Why they are called forever chemicals

PFAS stands for per- and polyfluoroalkyl substances: several thousand synthetic compounds built around a carbon-fluorine bond, one of the strongest bonds in organic chemistry. That strength is the entire point. It is what makes a coating repel water, oil and heat. It is also what means nothing in nature — no bacteria, no sunlight, no enzyme in your liver — efficiently breaks it apart.

So the exposure math is not about any single meal. It is about accumulation. Small amounts, repeated daily, in a body that has no good way to clear them.

The question is not whether one dinner is dangerous. It is what a pan you use twice a day for four years adds up to.

Where cookware fits in

PTFE — the material most people know by the Teflon brand name — is a PFAS polymer. It is what makes a nonstick pan nonstick. When that pan is new and used gently, it is relatively stable. The problem is that pans do not stay new.

  • Heat. PTFE coatings begin to degrade and release fumes above roughly 500°F. An empty skillet left preheating on a strong burner can pass that in a couple of minutes. The resulting fumes are well documented for causing flu-like symptoms in people, and are lethal to pet birds — the effect is well known enough to have a clinical name, polymer fume fever.
  • Scratches. Metal utensils, stacking, dishwashers. Once the surface is scored, particles come off into food and the bare aluminum underneath is exposed.
  • Age. A nonstick pan is a consumable. It is engineered to be thrown away every two or three years. Most households keep them far longer.

What the alternatives actually cost you

Once people decide to get the coating out of their kitchen, they usually run into the same four options — and each one has a real trade-off nobody mentions on the box.

  • Cast iron. Excellent heat retention, essentially immortal, and 7 to 8 pounds in a 12-inch skillet. It rusts if you forget it in the sink and it fights you on acidic food.
  • Carbon steel. Lighter than cast iron with the same seasoning requirement, and the same reaction to tomatoes and lemon.
  • Stainless steel. Inert enough for most people, dishwasher safe — but food sticks without plenty of oil, and it does leach small amounts of nickel and chromium into acidic dishes, which matters if you have a nickel sensitivity.
  • Ceramic nonstick. Marketed as the safe swap. In practice the sol-gel layer is the shortest-lived surface of the lot; many pans stop releasing food within a year.

The option most people have never considered

Pure titanium sidesteps the trade-off, because there is no coating in the design at all. The metal you cook on is the surface. There is nothing layered on top that can scratch through, flake, or break down at temperature.

Titanium is also the metal surgeons use for implants — hip joints, dental posts, bone plates. It is chosen there for exactly the property that matters in a pan: it is chemically inert. The body does not react to it, and neither does your food. It does not pick up a metallic taste from acid, and it does not need seasoning.

One honest caveat

Pure titanium on its own is a poor heat conductor — far worse than aluminum or copper. A pan made only of titanium would cook badly. Anyone who tells you titanium itself heats fast and evenly is selling you the construction and crediting the metal.

What to do about it this week

You do not have to replace an entire kitchen at once. In order of what actually reduces exposure:

  1. Throw out any nonstick pan that is scratched, flaking or discolored. That one is not a judgment call.
  2. Stop preheating empty nonstick pans on high. This is free and it matters more than most people realize.
  3. Replace the pan you use most — usually a 10 or 11-inch skillet — with something coating-free. One pan covers most weeknight cooking.
  4. Look at your cutting board next. Plastic boards shed microplastic into food with every cut, and wood traps bacteria in knife grooves.
